Strawberry Filled Chocolate Cupcakes with Champagne Frosting

Happy New Year!

Can you think of a better way to ring in 2012 than with a cupcake and a glass of champagne? How about if the two were some how combined? That is exactly what I did when I created this strawberry filled chocolate champagne cupcake and topped it with a champagne frosting.

I used these super cute New Year’s cupcake toppers that I found at Holiday Crafts and Creations. I’m so glad I stumbled upon this site; they have a ton of cute ideas and I love free printables.

Eggnog Cupcakes

I absolutely love eggnog .  I get so excited when I start seeing eggnog lattes on the menu boards of  coffee shops.  Although, I cant allow myself to drink more than one or two a holiday season. Have you ever checked out the calorie count on one of those things? A whopping 519 calories; I would have to spend at least an hour running  just to burn off my morning coffee.YIKES.

I have no idea how many calories are in eggnog cupcakes, but I’ve been wanting to try one.  Calories during the holidays don’t count. Right?

Blizzard Baking

Last weekend Girdwood was blessed with a blizzard which brought blowing snow, 70+ MPH winds,  several power outages & fallen trees.  It was the kind of weather that kept the dog from going outside.  So what’s a girl to do to keep from going insane? Whip up a batch (or two) of snow inspired cookies, of course.

I made a batch of these snowball fight cookies. They are a bit more smurfy than I imagined, but I guess that a risk you take when you mix colors while the power is out.
