Red White and Blue Mini Cupcakes

Since I was so busy last week, I planned on taking a break from baking this week to showyou some treats I haven’t gotten around to posting yet.

Sounded like a good plan to me…But yesterday I got home from work early and although I have a growing list of non food related things to do (working out, cleaning, yard work, organizing, walking my dog), I was bored and wanted something sweet. I decided to bake something, but it had to be quick & involve little to no mess or effort. Oh yeah, and since this week is July 4th, I wanted something red white and blue.

It’s been a pretty hectic week with several baking projects, blogging obligations & don’t forget my day job. The good thing I love all three  and I was able to end a busy week spending time with some good friends & a ton of mosquitoes camping.  Lucky for you, I haven’t had time to look at, much less edit pictures, and I’m tired.  Which is why I’m sharing these Baked Cinnamon Doughnuts with Vanilla Glaze that I made fora guest post over at  Hi! It’s Jilly a while back.

I got a doughnut pan and doughnut cook book for my birthday back in April. YUM! I was so excited.

This week I am featuring Everything in the Kitchen Sink. Sarah’s blog is packed with so many good recipes that I’d love to try. I thought I was going to have a tough time choosing a recipe.

Last week I made these Aztec Mocha Cupcakes.  I loved the sweet, spicy combination and wanted to find other recipes that combined sweet and spicy flavors.

As I was scrolling down though Sarah’s recent posts I saw this:

Coconut Cupcakes with Lemon Habanero Curd .  Right then and there I new I’d found my winner. I cant wait to try these.

Aztec Mocha Cupcakes & Cream Cheese Frosting

Last week was a friend’s going away party . The theme for dinner was Mexican. Other than re-fried beans I had absolutely nothing to contribute. What I did have was a bunch of pink cream cheese frosting left over from the fairy cake I  made a few days before. Rather than throwing it away or eating it, which would most likely be the case, I decided to make some cupcakes. To go along with the Mexican theme I made Aztec Mocha Cupcakes.

Fairy Birthday Party & Candy Clay

I love to make decorations for cakes and cupcakes out of gum paste and fondant. I don’t love  how awful they taste. I hate having to warn that although the toppers are edible; they are not “eatable”.

It’s inevitable; even with the warning, there will always be the one kid, and you’re lucky if its just one kid,  that eats a topper.

I was hired to make small cake and mini cupcakes for a fairy themed birthday party for a four year old. There I was trying to figure out what kind of decorations to make and all I could picture was the look on a four year old’s face after eating  an icky, chalky tasting topper. Did I want to be the reason that poor kid was traumatized by cupcakes?  Not so much.

Crazy Cooking Challenge- Strawberry Cheesecake Smoothie

Once again its time for the Crazy Cooking Challenge!

This month the challenge was to create a fruit smoothie. The only requirements were that the recipe must be a drink and must contain fruit. Easy enough, right?

My original plan was to make something with chocolate, banana & peanut butter. In my search for a recipe I saw this Strawberry Cheesecake Smoothie over at Cupcakes and Kale Chips. Right then and there I knew this was the perfect smoothie for me.

To make this smoothie you will need strawberries, banana, cream cheese, vanilla yogurt, & milk.
