I was so excited when I found out about the Foodie Pen Pal program that Lindsay over at The Lean Green Bean puts together. How much fun is it to get a box of food in the mail each month?
This month I received a box of southern goodies from Debra of Granny’s Down Home Southern Cooking.
For those of you that don’t already know, I live in a small ski town in Alaska. We don’t have mail delivery service; instead I have a PO Box that I rarely check unless I know something good is heading my way.
I cant remember why, but when I picked up my box from the Post Office I was STARVING.  I was afraid if I opened the  box before eating there may be things that wouldn’t make it home for photos.
Its a good thing I held out.
If I hadn’t  instead of looking at a picture of Moon Pies you most likely would be looking at a picture of empty wrappers. I love moon pies & they are even better when they are packaged in 100 calorie servings:)

I’m originally from New Orleans &  I love that Debra sent me a box full of southern goodies. Everything brought me right back home.
The Saban Sauce is made by Alabama’s head football coach, Nick Saban. The proceeds from this BBQ sauce go to Nick’s Kids Fund   which is a “non-profit organization dedicated to supporting children, family, teacher and student causes.”
Have you ever had fried green tomatoes? If not your missing out! I’m kind of weird about tomatoes; sometimes I like them sometimes I don’t. Serve them to me  dipped in some batter and fried and I’ll gobble them up quick.
I’m pretty excited to try out the fried green tomato batter mix. I might throw some zucchini in with the tomatoes since it is suggested on the box.
I was super excited about the fried  pork skins and once I opened the bag they didn’t stand a chance. I’m sure if your not from the south they might seem kind of gross or weird. Trust me they are a crispy & salty party in your mouth.

Cookies for Cody Online Auction July 27 – August 5

Today I am joining over 70+ bloggers and cookbook authors in an online auction organized by Stephanie Weaver from The Recipe Renovator.   I am donating one dozen of the Red Velvet White Chocolate Cookies shown in the picture below.  Once the auction closes I will bake the cookies and ship them to the highest bidder. To all of you who have told me how much you wish you could have some of my treats, here is your opportunity:)

Some Recent Cakes

Over the past few weeks I’ve made a few cakes that I’d like to share with you.

Last summer I made cupcakes and a small cake for a good friend’s wedding. The bride wanted chocolate and vanilla cupcakes with coconut frosting and a small layer cake with the same flavors. A couple of months before the wedding  I started testing recipes. I’d never baked for a wedding before so I was understandably nervous One afternoon the happy couple was planning on dropping by after a camping trip; a perfect time to whip up a batch of cupcakes  using one of the recipes I was planning on testing.

I found this post that I shared over at Addicted to Recipes a while back and I cant believe I never shared it here. How very rude of me to deprive you of such a yummy & easy treat. My deepest apologies:)

Being from New Orleans, food has always been a big part of my life, but I didn’t really start cooking & baking until I moved to Alaska after college. The first thing I remember baking from scratch was Strawberry Swirl Cheesecake that I found on a Philadelphia Cream Cheese package.  It was pretty good but it started  me on my mission to bake the perfect cheesecake. Ten years later, I finally got it right! Sorry I’m not sharing my cheese cake recipe today. That’s top secret. All of you have at least one recipe that you don’t share, Right?

Get Your Chef On – Coconut

I was so excited when I saw that the secret ingredient for this round of Get Your Chef on was coconut! I’m slightly addicted to coconut lately. I recently found Dried Young Coconut
at Costco & cant stop eating it. I may or may not be eating some right this very minute.
Anywho, I have a ton of coconut recipes that I have been waning to try & I decided that I was going to make coconut cups filled with some kind of chocolatey caramely  goodness.
Then yesterday I really wanted doughnuts so I nixed the coconut cups and made
Pina Colada Doughnuts.
These doughnuts are packed full of pineapple and coconut flavor.
I really wanted to brush a little bit of dark rum over them before I glazed them, but I was taking them to my friend’s house for dessert and she has 2 little ones. They probably wouldn’t like me anymore if I brought doughnuts over and they couldn’t have any.
So I decided against it.
These were a big hit, even my friend who swears she hates coconut liked them. All 12 vanished quickly after dinner. Some may have vanish before dinner too:)

Christmas in July Gift Exchange

A few weeks ago I signed up for a gift exchange that Adrianne over at Happy Hour Projects organized. I thought it would be fun to meet a fellow blogger & get present in the mail. Who doesn’t like to get presents in the mail?

I was matched up with a very craft lady, Morena, from Morena’s Corner. Seriously, have you checked out her blog? It is packed with so many creative & cute crafts. When I saw these Faux Silver Birds  & Flowers Pedestal I was amazed.

Raspberry Cream Cheese Cups

 

I shared these over at Cups by Kim a while back & forgot to share them here.

 These bite sized treats are so versatile. They are a great snack to have in the fridge to satisfy your craving  for something sweet and they would be a wonderful addition to any dinner party or desert table at an event.

I’m sure you’ve seen these raspberries stuffed with chocolate chips  on Pinterest. I thought they would be the perfect match for this recipe.


To make them simply stuff a white chocolate chip into the raspberry. Easy!
