Happy National Pie Day!

Its National Pie Day so I baked you a pie.

This fall while shopping at a Farmer’s Market  in Kauai, I had what I might say was one of the BEST slices of pie I have ever eaten…gooey layers of chocolate ganache & coconut custard topped  with  toasted coconut.  This chocolate coconut macaroon pie was made by a local bakery called  The Right Slice.  They sell their pies at various farmer’s markets on Kauai & recently opened a store front in Lihue. Yay! Next year I won’t have to wait until they are a nearby market to get a piece of pie. I’m not ashamed to admit it. My real motivation for checking out farmer’s markets was to find the Right Slice and get a piece of that pie.

Once I was back in Alaska I started craving the pie. Sadly, I know I’ll never be able to replicate it. Its probably better that I don’t .It would become a staple in my house and that cant be good for the waistline.

This afternoon I came across a Caramel Coconut Chocolate Chip Skillet Cookie Pie ( wow- try saying that 10 times fast) while browsing Created by Diane. Check out her site; it is full of sweet and savory recipes.

This pie was very easy to make and only takes about 30 minutes to make. Even if it is not the chocolate coconut macaroon pie I was searching for; it’s a pretty awesome substitution. The combination of caramel, chocolate, and coconut is delicious.

Here’s the recipe.

Caramel Coconut Chocolate Chip Skillet Cookie Pie

An easy to make skillet pie filled with gooey caramel, chocolate and coconut.


1/2 cup butter

1 cup sugar

3 teaspoons vanilla

1 1/2 cups flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 egg

10 caramels unwrapped and cut in quarters

1/4 cup mini chocolate chips

caramel sauce


  1. Preheat over to 350 degrees
  2. On stove heat a 12 in cast iron skillet on medium. Once skillet is hot reduce heat to medium-low & add butter.
  3. When butter has melted add the sugar and stir to blend.
  4. Add flour, salt, baking soda, egg and vanilla. Stir to incorporate the ingredients.
  5. Place caramels on top of the dough, add chocolate chips add coconut.
  6. Place skillet in oven and bake for 15 minutes. The pie is done when a toothpick inserted 2 inches from the edge comes out clean. DO NOT COOK UNTIL THE CENTER IS TOTALLY COOKED
  7. Serve warm and drizzle with Caramel Sauce
