Cranberry Cream Cheese Coffee Cake

Have you ever had this happen to you? You go to the grocery, come home, unpack your groceries and find something you’re positive you did not put in your basket.

I’m used to things like Oreos, Klondike Bars, extra buttery popcorn & candy bars “magically” appearing in in the cart, but this time it was cranberries. I’m pretty safe in assuming the boyfriend was not the culprit; he is not cranberry fan.

Instead of letting them go to waste, I planned doing something with them for Thanksgiving dinner. And then I completely forgot about them until this weekend.

There you have it, the story of the mystery cranberries that led to making this Cranberry Cream Cheese Coffee Cake. Fascinating, I know.

The cake itself is quite tasty, but the cranberry and cream cheese filling really boost the YUM factor. Feel free to experiment with other berries. I’m thinking raspberries would be delish!

Cranberry Cream Cheese Coffee Cake

Prep Time: 15 minutes

Cook Time: 60 minutes

1 hour, 15 minutes

A wonderful coffee cake stuffed with a cranberry cream cheese filling. This coffee cake is a great holiday treat.


For the coffee cake

1 cup sugar

2 1/2 cups flour

1/2 teaspoon salt

2 teaspoons baking powder

1 teaspoon baking soda

2 sticks unsalted butter, softened

3 eggs

2 teaspoons vanilla

1 cup plain Greek yogurt

For the Filling

2-3 cups whole cranberries

1/2 cup sugar

1 cup cream cheese, softened

1 egg

2 tablespoon powdered sugar


  1. Preheat oven to 350 degrees.
  2. Grease a 9 inch bundt pan
  3. Sprinkle 1/2 cup sugar over cranberries; mince cranberries using a food processor. Set aside.
  4. In a small bowl mix cream cheese, egg and powdered sugar until combined.
  5. In medium bowl, whisk flour, salt, baking powder & baking soda together.
  6. In the bowl of a stand mixer. cream the butter and sugar, until light and fluffy.
  7. Beat in eggs and vanilla until incorporated.
  8. Slowly add flour mixture and beat until incorporated.
  9. Fold in Greek yogurt.
  10. Pour half of batter into prepared pan. Spread cream cheese filling over batter & spread cranberries over cream cheese filling. Cover fillings with remaining batter.
  11. Bake for 50- 60 minutes or until a toothpick inserted in the center comes out clean.
