Easy Coconut Macaroons

These gooey bites of coconut are always a big hit. They are quick, easy and don’t require many ingredients. If you have coconut, condensed milk, flour, vanilla and salt these can be in your belly in about 20 minutes. *Warning* You do have to mix the ingredients together with your hands. The mixture is a bit sticky so this part can get a bit messy. Using a cookie scoop to make the macaroons really helps cut down on some of the mess and makes nice rounded macaroons.

I like to drizzle mine with melted chocolate. This time drizzled milk chocolate on some and dark chocolate on the others. You can also dip the bottoms in chocolate if you wish. The dark chocolate I used was bit thinner than the milk chocolate. I like the way it settled in to the coconut.

Yield: about 12 macaroons

2/3 cup flour

5 1/2 cups flaked coconut

1/4 teaspoon salt

1 (14 oz) can sweetened condensed milk

2 Tablespoons vanilla


  1. Preheat oven to 350 degrees.
  2. Line cookie sheets with parchment or foil.
  3. In large bowl, stir the flour, coconut & salt together.
  4. Add the condensed milk to the mixture. Combine the ingredients with your hands until well blended.
  5. Use a cookie scoop to drop dough onto the cookie sheets.
  6. Bake for 12 - 15 minutes or until coconut is toasted
