I’m half way into my whirlwind vacation, killing time in the Vegas airport & drinking a spicy mango margarita.YUMMY! In the past few days we have driven over 20oo miles through 5 states. Now we’re on our way to warm and sunny California to do some surfing, shopping & wine tasting.

, and I am Pamela. I am a wife, mother of 6, homeschool teacher and I have a small Healthy Cupcake & Cookie business. Everything that I make is made with 100% Whole Wheat Flour and my secret ingredients. You will not know that you are eating healthy when you taste these treats.
I started blogging January 2012, I started because I opened my healthy treat business and wanted to promote it, but I got more than that, people that really like my healthy treat recipes, so that’s what I love each day the comments, and the friends I have made over the past 3 months. I have been baking since I was 12, my grandmother was the best baker in the world, she made everything from scratch, and I watched her, and learned everything she knew, and now I am doing what she did but just in a more healthy way. One kitchen item that I can’t live without is my Kitchmaid Commercial Blender, I love it, it does everything from mixing, to kneading, to making ice cream and it can do so much more. My favorite dessert to make is cupcakes and cookies, I think that might be a little obvious, because of my business. But I will dabble in some other healthy desserts when I come across a recipe that I want to tweak, and 9 times out of 10 it comes out really good. Now let’s get to the recipe!
Since its Spring season and Easter is right around the corner, I made No Bake Peanut Butter Nests, I got this recipe from Couponing & Cooking one of my favorite recipe blogs, and I just tweaked the recipe to make it a healthy treat. By far my favorite Easter candy is Peeps, with Cadbury Creme Eggs coming in at a close second. The weird part about my love for Peeps is that I like them when they are slightly stale. Every holiday that Peeps are available, my mom sends me boxes of them.Because she love me, she pokes holes in the wrappers before shipping them. By the time they make the journey from Louisiana to Alaska they have the perfect amount of staleness. This is no lie people; I can’t make this stuff up. Read more... Last week was a whirlwind. I had plans for something fun almost every night of the week. Then we decided on a last minute Spring get away, a must after an Alaskan winter! I was beginning to wonder if I was going to get around to my Easter treats before we left. I had all these ideas that I had to get out of my head. Does anyone else have this problem? Notice anything different? That’s right I gave the blog a bit of a facelift this weekend. Although, I liked the old theme I never really loved it & decided to look for other options. The new look is still a work in progress but I think it suits me more. This whole blogging adventure has me wanting to take on new a new hobby, graphic design. I guess having some basic html knowledge would be nice too. Who knows maybe one day I will find an awesome graphic designer that is willing to work for treats. It could happen, right? Read more... Happy St. Patrick’s Day!
I had pretty much decided that I wasn’t going to have any time to get any St. Patrick’s Day treats done this year. My first problem, I went to dig out my St. Patrick’s Day cookie cutters and I didn’t have any. Really? How is that possible? I have made cookies for St. Patrick’s day before. I have pictures ( really bad ones) to prove it. I tried to order some online but couldn’t find any in-stock. Even Michael’s seemed to be out of St. Patrick’s Day supplies when I went. There were no St. Patty’s Day cupcake liners, no shamrock sprinkles, & no shamrock cookies cutters left to speak of.So when i got the flu I decided it just wasn’t meant to be this year. Read more... Last week marked the 100 year anniversary of Oreos. My favorite thing to do with Oreos, besides eating an entire package of them, is to use them in a crust for pie or cheesecake. That is exactly what I decided to do to celebrate Oreo’s 100th anniversary. I know! I know! I’m a little late. One of the many things I miss about New Orleans is Mardi Gras. What’s not to miss about a two week long party filled with parades, music, good food and King Cake parties. Vanilla Cupcakes with Chocolate Cream Cheese Frosting
I’m really into the idea of desserts for two. I’m especially loving the cupcakes for two recipes I’m coming across lately. I wrote about some cherry vanilla cupcakes for two earlier this month that were a big hit. If you are interested you can read about them here. Happy Valentine’s Day! I’ve been so focused on Valentine’s Day Cupcake ideas that I almost forgot to make cookies with my new cookie cutters and supplies Karen’s Cookies. If you haven’t already checked out this site, I highly recommend you do. She has some great tutorials, recipes, videos & supplies like the kissing lips used on these cookies.
