Lucky St. Patty’s Day Cupcakes

Happy St. Patrick’s Day!

I had pretty much decided that I wasn’t going to have any time to get any St. Patrick’s Day treats done this year. My first problem, I went to dig out my St. Patrick’s Day cookie cutters and I didn’t have any. Really? How is that possible? I have made cookies for St. Patrick’s day before. I have pictures ( really bad ones) to prove it. I tried to order some online but couldn’t find any in-stock. Even Michael’s seemed to be out of St. Patrick’s Day supplies when I went. There were no St. Patty’s Day cupcake liners, no shamrock sprinkles, & no shamrock cookies cutters left to speak of.So when i got the flu I decided it just wasn’t meant to be this year.

 

I did manage to make Grassshopper Pie Cupcakes.   I convinced myself that since they were green that would be be good enough. I’d move on to Spring and Easter treats and call it good. I pretended not to care when I saw all the fabulous cupcakes, cake pops, pies & cookies on other blogs. Then yesterday I cracked; I had to do something.  A while back I stumbled upon a post about” low cal” cupcakes that only use 2 ingredients, a box of cake mix & a can of soda. I saw the technique again in this post at Mrs Foxs Sweets& decided to give it a shot.

To make the cupcake I used these ingredients.

 

You can use any cake mix and soda combination you want. I wanted a lemon-lime flavor so I  chose lemon cake mix and Diet 7 Up to keep it “low-cal” . To make the batter, mix the soda and cake mix together with a mixer until the ingredients are combined. Then scoop batter into lined cupcake pans & bake for 15- 20 minutes. Easy and pretty mess free, tw0 things I LOVE!. I was really surprised at how these turned out. I thought they would be OK, but they were VERY good, incredibly fluffy with a great texture.

 

 

I made the L-U-C-K-Y decorations out of melted white chocolate sprinkled in green sanding sugar. If you are interested in learning how to do this you can check out this post. I try to make decorations that are edible and tasty as often as possible.

I also wrote out the word lucky in script but they all broke when I removed them from the wax paper. So I ate them and did some simple decorations on the rest of the cupcakes.
