I feel like I’m stuck in a bit of a blogging rut lately. I’m baking as much as ever and I having a ton of fun learning to use the fancy new camera Santa brought me for Christmas. (I was a very good girl last year!) But for some reason, when I sit down to write about what I baked I draw a blank. Bloggy writer’s block…who knew?
Tonight I decided it was time to break out of the rut. Is there a better way to do that than by sharing donuts? I think not. These are not just any donuts. These donuts are full of tropical flavors. I was so excited when I saw that the secret ingredient for this round of Get Your Chef on was coconut! I’m slightly addicted to coconut lately. I recently found Dried Young Coconut
at Costco & cant stop eating it. I may or may not be eating some right this very minute.
Anywho, I have a ton of coconut recipes that I have been waning to try & I decided that I was going to make coconut cups filled with some kind of chocolatey caramely goodness.
Then yesterday I really wanted doughnuts so I nixed the coconut cups and made
Pina Colada Doughnuts.
These doughnuts are packed full of pineapple and coconut flavor.
I really wanted to brush a little bit of dark rum over them before I glazed them, but I was taking them to my friend’s house for dessert and she has 2 little ones. They probably wouldn’t like me anymore if I brought doughnuts over and they couldn’t have any.
So I decided against it.
These were a big hit, even my friend who swears she hates coconut liked them. All 12 vanished quickly after dinner. Some may have vanish before dinner too:)

It’s been a pretty hectic week with several baking projects, blogging obligations & don’t forget my day job. The good thing I love all three and I was able to end a busy week spending time with some good friends
& a ton of mosquitoes camping. Lucky for you, I haven’t had time to look at, much less edit pictures, and I’m tired. Which is why I’m sharing these Baked Cinnamon Doughnuts with Vanilla Glaze that I made fora guest post over at Hi! It’s Jilly a while back.
