This post is a few days late; I scheduled it to publish on Friday but I guess sometimes I’m not as computer savvy as I would like to think I am. Better late than never, right?
I’m half way into my whirlwind vacation, killing time in the Vegas airport & drinking a spicy mango margarita.YUMMY! In the past few days we have driven over 20oo miles through 5 states. Now we’re on our way to warm and sunny California to do some surfing, shopping & wine tasting.
Last week was a whirlwind. I had plans for something fun almost every night of the week. Then we decided on a last minute Spring get away, a must after an Alaskan winter! I was beginning to wonder if I was going to get around to my Easter treats before we left. I had all these ideas that I had to get out of my head. Does anyone else have this problem? Once you get an idea in your head it bugs you until you do it?? Finally this weekend I found some time to do some baking.
Happy Valentine’s Day! I’ve been so focused on Valentine’s Day Cupcake ideas that I almost forgot to make cookies with my new cookie cutters and supplies Karen’s Cookies. If you haven’t already checked out this site, I highly recommend you do. She has some great tutorials, recipes, videos & supplies like the kissing lips used on these cookies. An added bonus was the reasonable shipping rate and speedy arrival; this is a rare occurrence for Alaskan residents.
I have lived in Alaska for almost 12 years.That’s long enough to stop calling all sodas a Coke & long enough for my southern drawl to have mostly faded away. I say mostly because about 5 minutes after I step off of a plane in New Orleans,it all comes flooding back. I suddenly I hear myself saying things like “bamamamas” (if you don’t speak N’awlins that’s by my mama’s). I have no idea how it happens; I don’t call my mom “mama”- EVER. Deep down inside of me there’s still a Southern Bell that needs to rear her pretty little head from time to time. I actually love that I grew up in New Orleans. How can you not love a place with so much character and such great food? One of the foods I love the most is Red Velvet cake.

Can you think of a better way to ring in 2012 than with a cupcake and a glass of champagne? How about if the two were some how combined? That is exactly what I did when I created this strawberry filled chocolate champagne cupcake and topped it with a champagne frosting.

I absolutely love eggnog . I get so excited when I start seeing eggnog lattes on the menu boards of coffee shops. Although, I cant allow myself to drink more than one or two a holiday season. Have you ever checked out the calorie count on one of those things? A whopping 519 calories; I would have to spend at least an hour running just to burn off my morning coffee.YIKES.
I have no idea how many calories are in eggnog cupcakes, but I’ve been wanting to try one. Calories during the holidays don’t count. Right?
