Today’s guest post is by Erin from Salmon At Seven. Erin lives in Alaska & we met way back in the days when she was  still working at Alyeska Resort. I’m so happy to have her here today sharing one of her recipes.  Welcome Erin!

When Dawn first approached me about guest posting, my immediate reaction was AWESOME! I’m in! When I re-read her email, and saw the caveat that it be something sweet. I then said “Oh boy.” If you’ve followed my cooking exploits at all, you’ll know that my creative juices run more toward the savory than the sweet. I knew I had my work cut out for me.

Pina Colada Pie

I shared this Pina Colada pie recipe over at Miss Information a few weeks ago. If  you haven’t checked out Kelley’s blog you should make your way over; it’s full of great recipes and crafts. I’m tired, head achy and slightly grumpy this week. Perfect time for a repost, if you ask me

This  is really easy to make. And what’s not to love about a cream cheese & pineapple filling sitting in a coconut pie crust.  Can you say YUM!?

Ingredients:

For the crust:

3 cups shredded coconut

1/3 cup melted butter

Grasshopper Pie Cupcakes

Last week marked the 100 year anniversary of Oreos. My favorite thing to do with Oreos, besides eating an entire package of them, is to use them in a crust for pie or cheesecake. That is exactly what I decided to do to celebrate Oreo’s 100th  anniversary. I know! I know! I’m a little late. After I decided to make these Grasshopper Pie Cupcakes with an Oreo Crust, I came down with some icky flu. Better late than never, right?

Its National Pie Day so I baked you a pie.

This fall while shopping at a Farmer’s Market  in Kauai, I had what I might say was one of the BEST slices of pie I have ever eaten…gooey layers of chocolate ganache & coconut custard topped  with  toasted coconut.  This chocolate coconut macaroon pie was made by a local bakery called  The Right Slice.  They sell their pies at various farmer’s markets on Kauai & recently opened a store front in Lihue. Yay! Next year I won’t have to wait until they are a nearby market to get a piece of pie. I’m not ashamed to admit it. My real motivation for checking out farmer’s markets was to find the Right Slice and get a piece of that pie.
